Daughter has just made these..they are delicious.
100g butter
150g caster sugar
grated rind and juice of 2 lemons
1 egg, beaten
350g plain flour
1 tsp baking powder
1 tbsp milk
icing sugar for dredging
Cream butter and sugar and lemon rind.
Add lemon juice and egg a little at a time.
Sieve in the flour and baking powder and add milk to form a soft dough.
Divide into golf-ball sized pieces and make into shapes or letters.
Bake at 160C for 15-20 minutes.
Dredge with icing sugar whilst still warm.
