Beetroot.

I bought some beautiful beetroot today at the market, going to try roasting them and serving with Goat's cheese.

I roasted the beetroot in thick slices for half an hour wrapped in foil, then sliced the skin off and grilled some goat's cheese on bread and mixed with salad and lime-marinaded red onion...yum!
