Rub 2 oz of margarine into 4 oz self raising, stir in 1oz caster sugar and 1 oz dessicated coconut, one beaten egg and 2 tablespoons of milk. Grease a basin and spoon raspberry jam into the bottom, pour mixture on top.
Steam in the basin covered with pleated greaseproof paper for 45 mins. Serve with custard. Yum!
