Whisk 4 egg whites until they form peaks, then whisk 11oz of caster sugar in one spoon at a time until the mixture is stiff and glossy.
Spread onto a tray covered in non stick baking parchment and bake at 130C for approx 1 hour then leave to cool with the oven door open.
Cover in whipped cream and pile on mixed fruit such as raspberries, strawberries, blackberries, blueberries and the pulp from passion fruit.
Dredge with icing sugar and decorate with shards of dark chocolate (made by drizzling melted chocolate on a silicone sheet and frozen)
